The Wedding Menu - Our Lunch at Bale Dutung



 

This is my last post of the "wedding series".   I just had to finish this one to complete the story so my family and I have something to look back.  Importantly, so that my sister, Maritza who's currently in Vietnam would  still get to read the story as she missed this big event last year. 

So, here goes on what we had for a sumptuous lunch.   On the right side is the front page of the menu which I guess was the official cover.

Below is the content.  The name of the guests were indicated on the left side while the menu was on the right side. Maricar insisted on a very intimate celebration and thus, only my immediate family, the two sponsors and their guests were invited. 


We were greeted by Mary Anne when we entered the house.  Introductions were made before we were escorted to the dining table.

A refreshing dalandan juice was immediately served to us the moment we sat down to the dining table.   This drink was the most delicious citrus one I've had so far - making  me crave now to beat the summer heat.  


If you're familiar with Italian cuisine where a bread and dipping oil is served before starting the meal, at Bale Dutung they have their own version of that.  Three dips were served (picture shows 4 bowls since the 2 have the same content)  - tabang talangka (crab paste), burong nasi (fermented rice) and pesto sauce with soda crackers.  This was a great way to start the meal and all were satisfying whether crackers were topped with the individual dip or a combination.  I never knew pesto can be this versatile as well as using the fermented rice and crabpaste  for crackers for I only eat those with rice.



Here's what's actually in the main meal.  For the salad, we had Esaladang Pako (Fern Salad).  We used to have this plant in our farm and it's a staple in our meals, so it's nothing really extraordinary.  The dressing used was Alubebe or Bagoong.



I wasn't able to take pics of the Piniritong Lumpiang Ubod with Claude 9 Oriental Sauce, so here's a picture of my younger sisters holding the appetizer.

Mustasa at Hito sa Claude '9 Burong Hipon.  A really great combination.



Talangka sushi.  I want to make my own version of this as tastes yummy! 


 


We had another appetizer that was not in the menu. It's a Thai salad. It's only me who was able to appreciate it. 



Very delicious homemade iced tea was also served in bottles.   Unfortunately, we weren't able to enjoy it that much since we had a number of wine bottles to finish.  



 Inasal na Manok at Claude' 9 Talangka Rice followed.  Chicken was so tender and tastes better than the ones I've tried in restaurants specializing in Inasal Chicken.  Of course, the talakanga rice was also superb. I can eat this dish daily, 3x a day. LOL


 


 Here's the most exciting part!  The 5 ways to eat lechon (roast pork).  Who would have thought that this roast pork which we normally have every Christmas cooked in our backyard during my childhood days can be served in 5 different ways.  I was brought up to learn that this can only be eaten in two ways - the lechon dipped in the sauce and the leftover cooked in "pinaksiw"(sauce is combined to the leftover meat and seasoned with whole peppercorns, salt, vinegar and laurel leaves and a little sugar if needed).


Without further ado, here are the pictures that say it all.


Porky in its humble state. Hehehe! Unmassacred yet by Chef Claude and the Manaloto family, well if you consider the slaughtering and roasting not a massacre yet. Forgive me for the word. LOL.



 



This is the first way to eat it - Balat ng Lechon at Liver Sauce.   My favorite part - the roasted skin and sauce.   Soooo tasty!



The 2nd way  - Fried Lechon Flakes binalot sa Tortilla at Claude '9 Oriental Sauce. Those who love eating shawarma would love this dish.  The flakes cooked to perfection.

 Before rolled up, I put cilantro on mine so it tasted more like a Vietnamese dish. 



 


The 3rd way - Inihaw na tadyang na Lechon at Ensaladang Talong. This is the crowd's favorite. 



The 4th way - Sinigang na Lechon! This is my favorite. Of course, I got the one of the best parts of the pork - legs! LOL. Can you see the fats? LOL.


 


Vegetables in Sinigang.  Can you see the taro?  Oh, I just love eating that little rootcrop.



And what's the best way to enjoy this dish? Yes, for Filipinos who love to eat rice, you're right. A meal especially with Sinigang as a viand would not be complete without rice.  A bonus is having your rice cooked in banana leaves.



 
The 5th way - Inasadong Pata ng Lechon.  We were so full by this time, though we still have some more room to taste this last dish that was delicious as the rest of the lechon dishes. 



How did we end the meal? My most awaited part - DESSERTS!


This is the famous dessert of the Tayags.  The PARADISO.  It was named by the late  Doreen Fernandez, a food critic and author.  This dessert was indeed a paradise -  a great combination of ube, macapuno and yema balls swimming on sweetened carabao's milk.  HEAVENLY!



And what goes with a dessert such as this after a meal?  For those who are fond of coffee, they would agree with me.


Kapeng Sinaunang Panahon at Gatas Kalabaw.



To complete the mood of the wedding reception, the Tayags gave a "wedding gift" to the couple which is another delicious sweet treat - Tibuk-tibuk.  Mary Anne told my sister to think of that as their wedding cake and ordered them to cut it. This dessert is another Kapampangan delicacy that is made of carabao's milk and some starch. 



Tsaang Pandan was also served for those who are not drinking coffee.    And that concludes our 4-hour lunch/merienda  for sister's wedding reception. 



Off the topic...


A funny picture taken by the bride!  On our foreheads are frozen towels that were given after eating the Sinigang Lechon. It served its purpose as we were refreshed thereafter.

Bale Dutung - the reception venue

When my sister announced her civil wedding would be held in our town, the first thing she asked me was where we're going to have lunch after the ceremony.  We thought of two places - Yats & Bale Dutung.  She checked on the menu of both dining places and because of my persuading and their "5 ways of  serving lechon", we decided to have it at Bale Dutung.

Bale Dutung  (Pampango term for house of wood) is located at Villa Gloria in Angeles City and is owned by two Kapampangans - renowned artist/chef , Claude and his wife, Mary Anne Tayag.  Claude himself cooks the food while Mary Anne takes charge of the dining service.  A very good tandem. 

I am glad that I learned of this place from food bloggers that I follow as this dining place is a well-kept secret located in a subdivision.  Being a food lover, I totally enjoyed the whole experience of having to taste good food from appetizer, the 5 or 6 lechon dishes down to the desserts and drinks, not to mention the hospitality of the couple. 

I can't wait on a next food trip on this place.  Sisses, let's plan another party there. Calling Maritza...  :D

@ Wine Shop in Clark - before heading to the wedding reception

Mikel, being a true Spanish is fond of drinking wine. It's a must for him to always have a drink in every meal. So our lunch was no exception. He brought us to the Wine Shop in Clark to purchase several bottles of red, white and sparkling wines before heading to the reception place. 

  

Now, what do I do with a camera on hand and peeps roaming around the shop waiting for the purchases to be completed?  You guess it right. I took pictures of the shop as well as the people inside it who happens to be my family. :D

The Wedding

To have continuity on the love story of this blog which is about my sister, Maricar and Mikel, I will have to post the Part 2  - "the wedding".

June 24th of 2009 marked their civil wedding day. This date was uncalled and unanticipated. 

You see, after the engagement, the whole family got excited as this was the 2nd wedding among the 6 daughters after the first one happened last 6 years. 

Of all my sisters, I guess, because of being the eldest,  I was the one who was more hands-on in helping the soon-to-be bride. Oh well, I just love weddings and I am equally if not more than excited than my sister. 

It started with a lot of magazine purchases to looking for suppliers to making reservations to gown fittings and lastly to printing the invitations which was canceled.  

An accident  happened that pushed back the wedding date slated on November 30, 2008.  Mikel was playing tennis during their Employee Day, if I am not mistaken which brought an injury on one of his legs that took him to wear a fiberglass cast for long.  He was able to walk  again by April of 2009. 

To make the long story short,   because of busy schedules,  the couple decided to have  a much simpler civil wedding instead of the planned church wedding (the family is still waiting though for a church wedding to happen. ;-0).

Blogging again - thanks to Wordpress!

December of 2009, I was excited to continue my blog. The year was about to end and I can start anew. Unfortunately, just like some of my NY's resolution, blogging is one that was left unfinished.  The first quarter of 2010 has ended and still I haven't posted a single entry. :(

 

I am still basically new in the world of blogging.  So, again, this is another attempt to consistently post my daily thoughts and activities.  Pardon me for being such a procrastinator.  It's one of the worst attitudes  I have yet to learn to remove from my system.  As a start, by blogging , I could measure if I'll remain a procrastinator or not, which I hope NOT. :D

 

Btw, thanks to Wordpress for consolidating my Livejournal and Blogger accounts.  What a good start to enjoy blogging again!  So, wish me good luck. :p

The Engagement - The story of the much-awaited wedding of 2008 turned 2009 (Part 1)

November of 2007, the same year I told myself to start exploring different places, I convinced my younger sibling, Maricar to accompany me on a birthday trip. She knows the general manager of Pearl Farm Resort then, Mikel Villarde through their common nature of work so I grab the opportunity to ask her to join me for my birthday. Talking about opportunity, huh? Hehe!

So, October 31 of 2007, we were off to Davao with a stopover in Cebu via the Cebu Pacific. 

During that three-day stay at Pearl Farm, I got to discover the non-businesslike side of the Mikel. And on our last night at the Pearl Farm’s Parola Bar while seated on one bench having a drink , Mikel approached me for a serious talk. He told me he found the girl he wanted to marry and it’s my sister! And he’ll do everything for it to happen sooner. He said that with conviction that I knew it would come true. 

Indeed, it was very soon! March 20, 2008, four months after that serious talk , I got a text from Maricar who went back to Pearl Farm with my other two younger sisters telling me she’s engaged! I felt her happiness from her messages at that time and couldn’t wait for the details of her engagement. The pictures will tell the rest of the story.

Carpe diem!

I got very busy lately and wasn't in the mood to update my blog but tonight even if I am a bit tired, I decide to write.

These days, I am in my baking mode, cake decorating to be specific. I enrolled myself in Advanced Cake Decorating course I've taken about 5 years ago. It's a refresher course so to speak. My half-day classes twice a week consume my days-off. And when I am online, I always browse sites where I'll get ideas of cake and cupcake decorations.

Anyway, that is not what I want to talk about.

After my class a while ago, I decided to go to the mall to meet my sister and watch Transformers 2. However, she called-off the movie date. Nonetheless, since my mind is set to view the film, I pushed through with the plan and watched it by myself.

It has been years since I last went to a cinema alone to see a movie and thought I would never do it again. The feeling I had was still the same as the 1st time I did it. I felt so independent though at the back of my mind I was conscious of what those who see me were thinking (as if they care and they indeed notice me, huh...LOL).

Now that my sisters and most friends are far from home, are married or in a relationship, I know I will be watching alone again as long as I fancy a movie. Chances of having them spend a few hours with me in a movie house is slim when they can watch movies with their husbands or boyfriends.

Don't get me wrong. I am not a loner, but at times, it's fun to be alone for you to tend to enjoy your own company. It's one thing I don't mind being with over and over again. And one day, my dream of traveling alone and exploring another place will happen as well for I know I'll discover more of myself in such situation.

I would just have to say then - CARPE DIEM!
